Ingredients:

2 cups rolled oats
1 ½ cups milk (dairy or plant-based)
2 large eggs
1/4 cup honey or maple syrup
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp baking powder
1/4 tsp salt
1 cup mixed fruits (such as blueberries, strawberries, and apples)
1/2 cup mixed nuts (almonds, walnuts, or pecans), chopped
1/4 cup seeds (chia or sunflower seeds, optional)
2 tbsp butter or coconut oil, melted (for greasing the pan)
Instructions:

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with butter or coconut oil.

Prepare the Oats Mixture: In a large mixing bowl, whisk together the rolled oats, milk, eggs, honey or maple syrup, vanilla extract, cinnamon, baking powder, and salt. Stir well to combine all the ingredients.

Add Fruits and Nuts: Gently fold in the mixed fruits and chopped nuts into the oat mixture. If you’re using seeds, add them at this stage as well.

Bake: Pour the mixture into the prepared baking dish and spread it evenly. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the oatmeal is set in the center. You can test doneness by inserting a toothpick; it should come out clean.
