Introduction:

Ingredients:
2 tablespoons unsalted butter
1 medium onion, finely chopped
2 cloves garlic, minced
4 medium potatoes, peeled and diced
2 cups vegetable or chicken broth
1 cup milk (or cream for a richer version)
Salt and pepper to taste
1 teaspoon fresh thyme or rosemary (optional)
Fresh parsley for garnish
Instructions:
Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and garlic and sauté until softened and fragrant, about 5 minutes.
Cook the Potatoes: Add the diced potatoes to the pot, stirring well to coat them in the buttery mixture. Let them cook for about 2-3 minutes.
Add the Liquid: Pour in the vegetable or chicken broth, followed by the milk or cream. Stir to combine and bring the mixture to a simmer. Allow it to cook for 15-20 minutes, or until the potatoes are tender and easily mashable with a fork.
Mash or Blend: Once the potatoes are cooked, you can either mash them directly in the pot for a rustic texture or use an immersion blender for a smoother consistency. If you want a super creamy dish, you can use a regular blender in batches.
Season to Taste: Add salt, pepper, and optional thyme or rosemary to the pot, stirring well. Taste and adjust seasoning as necessary.
