This unique take on the classic spaghetti combines the beloved Italian pasta with Chicago-style ingredients, making it a fusion dish that’s perfect for family dinners or casual gatherings. Whether you're a Chicago native or a newcomer to the city’s cuisine, this dish promises to bring a taste of the Windy City to your table.

Ingredients:

1 pound of spaghetti
2 tablespoons of olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 bell pepper, diced
1/2 cup of Italian sausage, crumbled
1 can (14 oz) of crushed tomatoes
1 can (6 oz) tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon sugar
1/4 cup of red wine (optional)
Salt and pepper to taste
1 cup of shredded mozzarella cheese
1/2 cup of grated Parmesan cheese
Fresh basil or parsley for garnish (optional)
Instructions:

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain and set aside.

Prepare the Sauce: In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until softened, about 3 minutes. Stir in the diced bell pepper and crumbled Italian sausage, cooking for an additional 5-7 minutes until the sausage is browned.

Simmer the Sauce: Add the crushed tomatoes, tomato paste, oregano, basil, and sugar to the skillet. Stir to combine. If you prefer a richer flavor, pour in the red wine. Allow the sauce to simmer on low heat for about 20 minutes, stirring occasionally. Season with salt and pepper to taste.

Combine the Pasta and Sauce: Add the cooked spaghetti to the skillet with the sauce. Toss gently to coat the pasta evenly with the sauce.

Add the Cheese: Sprinkle the shredded mozzarella and grated Parmesan over the pasta and sauce. Allow the cheese to melt for about 5 minutes, creating a creamy, cheesy finish.

Serve: Transfer the spaghetti to a serving dish. Garnish with fresh basil or parsley for a touch of color and extra flavor. Serve hot.

Tips for Serving and Storing:

Serving: Chicago Spaghetti pairs wonderfully with a side of garlic bread or a crisp salad. For extra indulgence, serve it with a dollop of ricotta cheese on top.

Storing: Leftover spaghetti can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop, adding a little water or broth to help loosen the sauce.

Freezing: This dish can be frozen for up to 2 months. Store in a freezer-safe container, and thaw overnight in the fridge before reheating.
