The kale adds a hearty, earthy element, while the broccoli provides a fresh, vibrant crunch. Baked with gooey mozzarella, this dish is sure to be a family favorite. Perfect for dinner or as a side, this recipe is easy to prepare and incredibly versatile. Let’s dive into how you can make this indulgent yet healthy bake at home!
Ingredients:
1 bunch of kale, chopped (stems removed)
2 cups of broccoli florets (steamed or blanched)
1 ½ cups of shredded mozzarella cheese
1 cup of heavy cream
¼ cup of grated Parmesan cheese
2 garlic cloves, minced
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon dried oregano
½ teaspoon crushed red pepper flakes (optional for a little kick)
1 tablespoon butter (for greasing the baking dish)
1/3 cup of breadcrumbs (optional, for topping)
Directions:
Preheat your oven to 375°F (190°C) and lightly grease a medium-sized baking dish with butter.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the chopped kale to the skillet and sauté for 5-7 minutes, or until it softens and wilts.
In a separate saucepan, bring the heavy cream to a gentle simmer over medium-low heat. Stir in the Parmesan cheese, salt, black pepper, oregano, and crushed red pepper flakes (if using). Allow the mixture to simmer for a couple of minutes until the cheese is melted and the sauce thickens slightly.
In the prepared baking dish, layer the steamed broccoli and sautéed kale. Pour the creamy sauce evenly over the vegetables. Top with shredded mozzarella cheese and breadcrumbs, if desired, for an extra crunchy topping.
Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden brown on top.
Once out of the oven, allow the bake to cool for a few minutes before serving.
Serving and Storage Tips:
Serve the bake as a main dish for a vegetarian dinner or as a side to complement roasted meats.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until heated through.
For a fun twist, serve it with a side of garlic bread or a fresh green salad.
