Ingredients:
1 bunch of fresh asparagus, trimmed
1 cup cherry tomatoes, halved
1 ball of burrata cheese
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey or maple syrup (optional for sweetness)
Salt and pepper to taste
Fresh basil leaves, torn (optional for garnish)
A sprinkle of crushed red pepper flakes (optional for heat)
Instructions:
Prepare the Asparagus: Bring a pot of water to a boil and season it with a pinch of salt. Add the trimmed asparagus and blanch them for 2-3 minutes until they are bright green and tender-crisp. Drain and transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and pat dry with a paper towel.
Assemble the Salad: Cut the blanched asparagus into 2-inch pieces and arrange them on a serving platter. Scatter the halved cherry tomatoes around the asparagus.
Add the Burrata: Gently tear the burrata ball into smaller pieces and place them on top of the asparagus and tomatoes.
Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey or maple syrup (if using), salt, and pepper until well combined. Drizzle the dressing over the salad.
Garnish and Serve: Sprinkle torn basil leaves over the salad, add a pinch of red pepper flakes if desired, and serve immediately.
