Ingredients:
1 lb (450g) of chicken breast or thighs (cut into bite-sized pieces)
2 tablespoons olive oil or vegetable oil
1 large onion (diced)
3 cloves garlic (minced)
1 red bell pepper (sliced)
1 yellow bell pepper (sliced)
1 teaspoon cumin
1 teaspoon paprika
½ teaspoon chili powder
Salt and pepper to taste
½ cup canned diced tomatoes
½ cup fresh cilantro (chopped)
2 tablespoons lime juice
1 avocado (sliced)
Optional: 1 tablespoon hot sauce for an extra kick
Instructions:
Prepare the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken pieces and cook until browned and cooked through, about 7-10 minutes. Remove the chicken from the pan and set aside.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion, garlic, and bell peppers until they begin to soften, about 4-5 minutes.

Spice it Up: Add cumin, paprika, chili powder, salt, and pepper to the vegetables, stirring well to coat everything evenly. Let the spices toast for about 1 minute to release their full flavor.

Combine the Chicken and Tomatoes: Return the cooked chicken to the skillet, followed by the diced tomatoes. Stir everything together, ensuring the chicken is coated in the flavorful sauce. Simmer for another 5 minutes.

Finish with Freshness: Stir in the chopped cilantro and lime juice. Taste and adjust seasonings as needed, adding a touch of hot sauce if you prefer more heat.

Serve: Serve the dish hot, garnished with slices of fresh avocado on top.
