Ingredients
For the Beef Stew:
2 lbs beef stew meat, cubed
3 tbsp olive oil
1 large onion, chopped
3 garlic cloves, minced
4 medium carrots, sliced
3 medium potatoes, cubed
2 cups beef broth
1 cup red wine (optional)
1 tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
For the Chicken Stir-Fry:
1 lb boneless chicken breast, thinly sliced
1 tbsp soy sauce
1 tbsp sesame oil
2 tbsp vegetable oil
1 bell pepper, sliced
1 medium onion, sliced
1 cup snap peas
1 tbsp ginger, grated
2 cloves garlic, minced
3 tbsp hoisin sauce
1 tbsp rice vinegar
1 tsp chili flakes (optional)
Instructions
Beef Stew:
Brown the beef: In a large pot, heat the olive oil over medium-high heat. Add the cubed beef and brown it on all sides. This should take about 5-7 minutes. Remove the beef and set it aside.
Sauté the aromatics: In the same pot, add the chopped onion and garlic. Sauté for 2-3 minutes until the onions become translucent.
Build the stew: Add the tomato paste, dried thyme, and rosemary. Stir to combine and cook for another minute. Pour in the beef broth and red wine (if using), scraping any browned bits off the bottom of the pot.
Simmer: Return the browned beef to the pot along with the carrots and potatoes. Season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours until the beef is tender and the vegetables are cooked through.
Serve: Taste the stew and adjust seasoning if necessary. Serve hot with crusty bread or over mashed potatoes for extra comfort.
