2 tablespoons olive oil
1 pound boneless chicken breasts (or thighs)
2 garlic cloves, minced
1 medium onion, finely chopped
1 bell pepper, chopped
1 cup canned diced tomatoes
1 teaspoon dried oregano
1 teaspoon ground paprika
1 teaspoon salt
½ teaspoon black pepper
1 cup chicken broth
1 cup heavy cream
1 tablespoon fresh basil, chopped
½ cup grated Parmesan cheese
1 cup cooked pasta (optional)
Instructions:
Prep the ingredients: Start by chopping the onion, bell pepper, and garlic. Set them aside.
Cook the chicken: Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, paprika, and oregano. Cook the chicken on both sides for 6-7 minutes until golden brown and fully cooked through. Remove the chicken and set it aside to rest.
Sauté vegetables: In the same skillet, add the chopped onions, bell peppers, and garlic. Sauté them for 3-4 minutes until softened and fragrant.
Add the liquids: Pour in the chicken broth and diced tomatoes. Stir to combine. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.
Make it creamy: Reduce the heat and add the heavy cream to the skillet. Stir well to combine. Let it simmer for another 3 minutes, thickening the sauce.
