Ingredients:
6 medium-sized russet potatoes, peeled and thinly sliced
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1 cup milk
2 cups shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika (optional for extra flavor)
Fresh parsley, chopped (for garnish)
Instructions:
Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or cooking spray.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
Add the heavy cream and milk to the skillet with the garlic, stirring to combine. Bring to a simmer over low heat, then season with salt, pepper, and paprika. Allow the mixture to simmer for another 3-4 minutes.
In a large bowl, combine the shredded cheddar and mozzarella cheeses.
Layer the sliced potatoes in the prepared baking dish, slightly overlapping each slice. Pour a portion of the creamy garlic sauce over the potatoes, then sprinkle with a generous amount of cheese. Repeat the layering process until all the potatoes, sauce, and cheese are used.
Cover the dish with aluminum foil and bake for 45 minutes, or until the potatoes are tender when pierced with a fork.
Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.
Once out of the oven, sprinkle with fresh chopped parsley for a pop of color and freshness.
Let the dish cool for a few minutes before serving.
