Ingredients
Pudding:

2 ripe bananas (blend)
1 can coconut milk (full-fat)
1/4 cup maple syrup
1/4 cup cornstarch
1/2 tsp vanilla extract
Pinch of salt
Crumble:

1/2 cup rolled oats
1/4 cup almond flour
2 tbsp coconut sugar
2 tbsp melted coconut oil
1/4 tsp cinnamon
Directions
Step 1: Make the Pudding

Blend the bananas, coconut milk, maple syrup, vanilla, and salt.
Transfer to a saucepan and whisk in the cornstarch.
Stir over medium heat until thickened (5-7 mins). Remove from heat and let cool slightly.
Pour into bowls and refrigerate for at least 1 hour.
Step 2: Prepare the Crumble

Preheat oven to 350°F (175°C).
In a bowl, mix oats, almond flour, sugar, and cinnamon. Add coconut oil, stirring until crumbly.
Spread mixture on a baking sheet and bake for 10-12 mins, until golden.
