Irish Potatoes Casserole

Ingredients
– 2 lbs of potatoes, peeled and sliced into 1/4-inch rounds
– 1 cup of shredded sharp cheddar cheese
– 1/2 cup of milk (feel free to use a non-dairy alternative!)
– 1/4 cup of unsalted butter
– 1/2 cup of sour cream (low-fat works too!)
– 1/3 cup of sliced green onions
– 1 tsp of salt
– 1/2 tsp of black pepper
– Cooking spray for the baking dish
Directions
1. Start off by preheating your oven to 350°F (175°C), and then grab a 9×13 inch baking dish and give it a good coat with cooking spray.
2. Now, let’s parboil those potatoes – pop them in a large pot of boiling water for about 5 minutes. You want them to be just tender. Drain and set aside to cool a smidge.
3. Time for cheese! In a saucepan over medium heat, melt the butter then add in the milk, stirring until it’s nicely warmed. Sprinkle in half of the cheddar cheese and keep stirring until it’s melted and you’ve got a smooth mix.
