Ingredients:

2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 tablespoon instant yeast
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon ground cinnamon
3/4 cup warm water
1/4 cup olive oil
1 egg (for egg wash)
1 tablespoon sesame seeds (optional)
Instructions:

Prepare the Dough: In a large bowl, combine the flour, sugar, salt, yeast, cumin, coriander, and cinnamon. Stir until all dry ingredients are well mixed.

Add Wet Ingredients: Gradually add the warm water and olive oil to the dry mixture. Stir until the dough begins to form, then knead for about 8-10 minutes on a floured surface until smooth and elastic.

First Rise: Place the dough in a lightly oiled bowl, covering it with a clean cloth. Let it rise for about 1 hour, or until it has doubled in size.

Shape the Buns: After the dough has risen, punch it down to release any air bubbles. Divide the dough into 6-8 equal pieces and shape each into a smooth ball. Place the dough balls on a baking sheet lined with parchment paper.

Second Rise: Cover the shaped buns with a cloth and let them rise for another 30-45 minutes, or until they are puffy and have increased in size.

Prepare for Baking: Preheat your oven to 375°F (190°C). Whisk the egg and brush a thin layer over the tops of the buns. Optionally, sprinkle with sesame seeds for added texture and flavor.

Bake: Place the buns in the preheated oven and bake for 15-20 minutes or until they are golden brown on top.

Cool and Serve: Remove the buns from the oven and let them cool on a wire rack before slicing and serving with your favorite burger fillings.
