1/2 pound ground pork or chicken

1/4 cup finely chopped green onions
1 package wonton wrappers (about 30 wrappers)

1/2 teaspoon sugar
1/4 cup sliced mushrooms (shiitake or button)
1-2 tablespoons finely chopped green onions

Instructions:
Prepare the Wonton Filling: In a bowl, mix together the ground pork (or chicken), shrimp (if using), soy sauce, sesame oil, white pepper, ginger, garlic, and green onions. Stir until well combined and set aside.
Make the Wontons: Place a small spoonful of the filling mixture in the center of each wonton wrapper. Dip your finger in water and run it along the edges of the wrapper to moisten. Fold the wrapper in half to form a triangle, then press the edges tightly to seal. Bring the two corners together to form a traditional wonton shape, and seal them with a little more water.
Prepare the Soup Broth: In a large pot, combine the chicken (or vegetable) broth, soy sauce, sesame oil, and sugar. Bring to a boil, then reduce the heat to a simmer. Add the mushrooms and cook for about 5 minutes.
