Ingredients:

– 9 lasagna noodles
– 2 tablespoons olive oil
– 1 small onion, finely chopped
– 3 cloves garlic, minced
– 1 lb (450g) shrimp, peeled and deveined
– 1 lb (450g) scallops
– 1 cup crab meat
– 1/4 cup dry white wine (optional)
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 teaspoon dried basil
– 1 teaspoon dried oregano
– 1/4 teaspoon red pepper flakes (optional)
– 3 cups ricotta cheese
– 1/2 cup grated Parmesan cheese
– 1 egg, beaten
– 3 cups shredded mozzarella cheese
– 4 cups marinara sauce
– Fresh parsley, chopped (for garnish)

Directions:

Preheat and Prep: Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

Sauté the Veggies: In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Cook the Seafood: Add the shrimp and scallops to the skillet and cook for 3-4 minutes until just opaque. Stir in the crab meat and cook for another 2 minutes. Add the white wine (if using) and cook until the liquid is reduced by half. Season with salt, black pepper, dried basil, dried oregano, and red pepper flakes (if using). Remove from heat and set aside.

Mix the Cheese: In a medium bowl, combine the ricotta cheese, grated Parmesan cheese, and beaten egg. Mix well.
