Ingredients:
1 lb ground beef
1 packet taco seasoning (or homemade)
1/2 cup water
1 can (10 oz) diced tomatoes with green chilies
1 cup frozen corn (optional)
1 bag (10-12 oz) tortilla chips, lightly crushed
2 cups shredded cheddar cheese (or Mexican blend)
1 cup sour cream
1/2 cup green onions, sliced (optional)
1/4 cup chopped cilantro (optional)
Salt and pepper, to taste
Instructions:
Preheat the oven to 375°F (190°C). Grease a 9x13-inch casserole dish.
Cook the ground beef: In a large skillet, cook the ground beef over medium heat, breaking it apart with a spatula as it cooks. Once browned, drain excess fat if necessary.
Season the beef: Stir in the taco seasoning and water, and let the mixture simmer for 5-7 minutes, until thickened. Add the diced tomatoes (with their juices) and frozen corn, and cook for another 3-4 minutes, stirring occasionally.
Assemble the casserole: Spread the crushed tortilla chips evenly at the bottom of the prepared casserole dish. Top with the seasoned beef mixture, followed by a layer of shredded cheese.
Bake: Place the casserole in the oven and bake for 15-20 minutes, or until the cheese is fully melted and bubbly.
Serve: Remove from the oven and let it cool slightly. Top with sour cream, sliced green onions, and chopped cilantro (optional).
