Ingredients:
For the Béchamel Sauce:

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk (warm)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
A pinch of ground nutmeg (optional)
1/4 cup grated Parmesan cheese (optional, for extra flavor)
For the Croissants:

4 fresh croissants (store-bought or homemade)
4 slices of ham (thinly sliced)
4 slices of cheese (Gruyère, Swiss, or cheddar work great)
1 tablespoon unsalted butter (for toasting)
Instructions:
Make the Béchamel Sauce:

In a medium saucepan, melt the butter over medium heat.
Once the butter is melted, whisk in the flour to form a smooth paste (roux). Continue whisking for about 1-2 minutes until the mixture becomes slightly golden.
Gradually pour in the warm milk while constantly whisking to avoid lumps. Continue to cook, whisking frequently, until the sauce thickens (about 5-7 minutes).
Season with salt, pepper, and nutmeg, then stir in the grated Parmesan cheese (if using). Remove the sauce from the heat and set aside.
Prepare the Croissants:

Preheat your oven to 350°F (175°C).
Slice the croissants in half horizontally. You can toast the croissants lightly in a skillet with butter for extra crispiness, or skip this step if preferred.
Lay a slice of ham and a slice of cheese on the bottom half of each croissant.
Place the top half of the croissant on top, forming a sandwich.
Assemble and Bake:

Arrange the croissant sandwiches on a baking sheet lined with parchment paper.
Pour a generous amount of béchamel sauce over the top of each croissant sandwich.
Bake in the preheated oven for 10-12 minutes, or until the croissants are golden brown and the cheese is melted.
