400ml coconut milk
500ml chicken or vegetable broth

1 tablespoon brown sugar
1 lime, juiced
200g cooked chicken breast (shredded) or tofu for a vegetarian option

Instructions:
Prepare the Noodles: Cook the rice noodles according to package instructions. Once cooked, drain and set aside.

Create the Broth Base: In a large pot, heat vegetable oil over medium heat. Add the garlic, onion, and grated ginger. Sauté for about 2 minutes until fragrant and soft.
